Oven Ranges – These usually have an interior space that’s primarily used to cook meat or pastries. They also feature a series of gas burners and electric hobs located on the top. The size of your range will determine the number of hobs and burners. Some larger models include a griddle in the middle of each burner. The dual-function options let you bake, boil or fry at the same time. This is similar to what you can do in a home oven and stove but on a larger scale.
Convection Ovens – These are used in small kitchens where there is not enough space to install a full-size oven range. A fan is installed inside the oven to help distribute heat evenly. They have reduced temperatures or cooking times and can reduce shrinkage when cooking meat because the heat is distributed evenly throughout the joint, rather than being concentrated in one area.
Other ovens are available, including combination ovens which combine fan assisted cooking with steam cooking. Potato ovens are also available for large quantities of jacket potatoes and to keep them warm while they are being served.
